Podere Il Casale

We visited a beautiful organic farm just outside of Pienza called Podere Il Casale.  It's owned and operated by a lovely Swiss couple, who taught themselves everything they do on the farm - garden, make cheese, wine,  and olive oil. They even raise pigs, slaughter them on-site, and make delicious looking pancetta & sausage (I say looking because we arrived the day after slaughter and the meats weren't quite ready).  I highly recommend checking it out if you're ever in the area.  It's so impressive to see the many things they make and grow, and one of the most beautiful places we visited on our trip. If you're willing to lend a hand, they'll even put you up for free!  We tried to score a bed, but they had enough helpers for the season.  Luckily we were able to take some goodies back to our apartment, including pecorino aged in grapes, and a bottle of their Il Regio wine.  Heavenly!
